Profile Jun'ya Fujita Born in 1993 in Aomori City, Aomori Prefecture. Raised in Hachinohe City, he graduated from the Culinary Department of Momoishi High School in Aomori Prefecture. After working for three years at a restaurant in the Kanto region and another three years at a bistro wine bar in Hachinohe City, he became independent in 2017 and started "ORITOHA" in Tsuruta Town, Aomori Prefecture. While providing meals by reservation for one group per day, he also held edible art exhibitions themed around circulation, called "Eating Art Exhibitions," in Tokyo in 2019 and 2020. In 2022, he exhibited "Cuisine Thoughts," which explores the structure of modern cuisine, at Art Pollination held in Hirosaki City. In 2021, he opened "Kai," a shop specializing in boiled dumplings and tea. Currently, he mainly runs "ORITOHA - A Culinary Seat," where guests can enjoy a full course of 10 dishes that express the nature and scenery of Tsugaru through Jun'ya Fujita's sensibilities, along with writings that capture the emotions and landscapes of the moment.
